Service Description

Find out from field to fork expert Steve Tricker of Truly Traceable why game management is crucial to our countryside and learn about game prep and butchery before a hands-on session cooking your own dishes to take home. You could will be cooking with venison and either rabbit, pheasant, partridge or pigeon. Examples of what you could make include venison Wellington, pigeon pastilla, boned and stuffed pheasant ballotine, rabbit rillettes or venison cassoulet or ragu. Enjoy a lunch of Truly Traceable’s award-winning game pies made with wife Lynn’s secret pastry recipe (and buy extra to take home if you wish). This course will be a combination of demo and hands-on, working individually and as a group. Tea/coffee/welcome cookies and lunch are provided, along with all ingredients and materials, recipe sheets and aprons. All you need to bring are a couple of large lidded tubs and a chiller bag to take home your creations.
